Spring Weed?

Even the dandelions look wonderful when first blooming
Many people in this area love to eat dandelion greens - very tasty!

I had to eat them as a diuretic ....an acquired taste when eaten raw but not bad. My neighbour used to make dandelion wine...also an acquired taste:(

At the Greenmarket the mesculin sellers always include (they do ask first) if you want edible flowers in your mix .. nasturtium are very tasty too

I love the dandelions in the fields.. my husband deplores them and I think they're wonderful.
